I’ve been holding on to this recipe since 2008.  I got it from this blog.  It’s actually a giant sugar cookie base, a layer or cream and fruit on top.  The presentation is very pretty and overall a great dessert for the summer.  You bake the cookie first and let it cool.  Add the cream and then top with ripe fruit.  It’s very easy.  The only thing that I did differently from the original recipe was add a little bit of cool whip to the cream layer to make it a little creamier and fluffier.  The cookie base is all right but not great.  A shortbread might be better.   It’s still worth making and everyone really enjoyed it.
